FAQs:
1. Why don’t chefs use regular gadgets?
Chefs don’t use gadgets, so neither should you.
Chefs don’t know technically why regular ‘drag-through’ gadgets don’t work, but from experience they just know they don’t, so they don’t use them. What they find is that those gadgets take too much metal off, and if they do get a sharp edge, it doesn’t last long. Though the ‘ragged’ edges do cut, they make cuts that are too rough and damaging for fine chef work. All this should apply to anyone with good knives.
2. What’s wrong with regular sharpening gadgets?
So what’s technically wrong with these gadgets?
 If you drag your blade straight through a gadget (or drag a gadget along a knife blade), all you are doing is scraping and tearing metal off parallel to the edge. This will not create a real honed edge. You can see this in the picture at right (40x magnification). The small pieces of torn metal on the edge are weak and will soon be broken off with normal cutting. The edge will then have to be ‘scraped’ again through the gadget to rip the metal up and make the knife cut again.
3. Why isn’t Ozitech Diamond Fingers a gadget?
Ozitech Diamond Fingers is an accurate professional sharpening/honing tool, not a gadget.
The swiping motion down and across the Diamond Fingers is the same as the swiping motion across a traditional Steel, creating the same real honed edge, as shown in the micrograph here (40x magnification).
4. Why is Ozitech superior to traditional Steel and stone, rendering them obsolete?
Ozitech Diamond Fingers is technically (and practically) superior to traditional Steel and stone, because it is more accurate and creates the same professional hone.
What makes the Diamond Fingers superior to manual Steel and stone methods is that they achieve the same honed edge, and the patented fingers also control the edge angles so accurately that everyone achieves a perfect 20 degree bevel every time. It is so accurate that regular regrinding is not necessary.
Chefs today use 3 methods to get a real honed edge:
The traditional Steel. The swiping arc motion across a Steel creates a real honed edge, because it creates small scratches across the edge and this makes a micro-serrated edge. The downside? Nobody, including chefs, can control the angle of each swipe, and this is what ‘rounds off’ the edge to the point it needs regular regrinding. Experts who try Ozitech Diamond Fingers soon abandon the Steel.
A fine stone. Similar to the swiping motion across a Steel, skilled operators of stone sharpening can swipe the blade across a fine grit stone to create the same ‘microserration’. The downside? This takes a lot of time and skill, and it is very difficult (and vital) to control the angle of each swipe.
